Brown Rice Veggie Burgers

Ingredients
Makes 25 Burgers

3 cups brown rice, pre-cooked
2 cups soft bread crumbs
1 1/2 cup mixed vegetables, finely chopped (try carrot, mushrooms, corn and peppers)
salt and pepper to taste
1/8 cup vegetable oil

Directions

Mix ingredients (except oil) together and form 25 patties about 3/4 inch thick using 3/4 cup mixture per patty.

Fry in oiled pan for 8 minutes on each side over medium high heat. Serve.
